Carpigiani ‘Infusion Kit’ offers tool for gelato maestros

Leading ice cream equipment manufacturer, Carpigiani, extends possibilities of Maestro batch freezer range with introduction of new infusion kit.

Bringing together all the expertise and knowhow generated over the last seven decades of manufacturing equipment, Carpigiani, the world’s leading ice cream equipment manufacturer launched the Maestro bath freezer range in 2014. Representing the most innovative technology and quality components, the units in the Maestro range have symbolised the pinnacle of commercial ice cream and gelato ever since. Now, in development that is set to further expand on the capabilities of the portfolio, Carpigiani is delighted to announce the launch of the Infuser Kit.

The result of extensive research and development, the optional infuser kit takes the form of a hollow drum, positioned in the centre of the beater, within the chamber. Filled with dry ingredients, spices and other unique flavourings, the kit allows the base mix to pass through small holes during a specially programmed heat cycle, delicately infusing the chosen flavour evenly though the mixture.

Replacing the need to pre-infuse flavours out of the machine, often for many hours, the new infuser kit offers outstanding consistency and significantly cuts down on the time associated with producing such wonderful gelato – what’s more, the kit is ideal for both traditional sweet and more contemporary savoury flavours. The kit is particularly useful for infusing flavours that can be challenging to control, such as loose leaf tea, herbs, spices, or the delicate floral notes of some flowers.

The Infuser kit, available as an optional extra, can be fitted retrospectively to Carpigiani Maestro units already purchased, simply requiring a remodelled beater and a short visit from a Carpigiani engineer to add the dedicated infusion programme to the pre-set menu.
