We run taster sessions at our Hereford and Park Royal Development Kitchens. In the one day Introduction to Gelato you’ll learn the basics. How to create recipes, the balance between solids, water and air. We’ll go through production and serving and you’ll walk away knowing a whole lot more than you did before.
This is a two day course and you’re going to be learning things in a lot of depth. Raw materials, production methods, equipment, recipe balancing and we delve into the profit and business case modelling that you might need to consider if you’re thinking of setting up on your own.
Now we’re getting serious. Another two days to learn all about the technical aspects of gelato. Making your own recipes, balancing ingredients, sugar analysis, interpreting and correcting gelato mistakes and how to use plant based milks. If you’re keen to develop a vegetarian or vegan gelato, this is definitely the course for you.
Another two days of really intensive skill building and also branching out into other frozen desserts such as sorbet, semifreddo/spumoni and Gelato Lollies. In this course you’ll learn how to make alcoholic gelato as well as lots of practice and one to one help from our Gelato Masters.
